Ro Z's Sweet Art Studio cake decorating classes San Diego (North San Diego county) offer a variety of workshops, including how to bake cakes from scratch! You will find classes for a skill levels, from the home baker to the professional pastry chef.
Please find a listing of classes below, which change on a weekly basis with additions of workshops and specialty classes. Please register for classes at least 72 hours in advance (some classes may require a week or 2 weeks in advance). Spaces are limited, and registration is first come, first served. Registration is taken via online paypal payment and in-store debit card, cash, some major credit cards. Buttercream Rose Workshop: Students will learn how to create beautiful buttercream roses in this workshop! Please bring one recipe of American (Faux) buttercream colored to your preference; metal spatula; saran wrap; bottle of water; tips 10 and 104, 6 Hershey kisses, wax paper, flower lifter scissors (optional), metal flower nail, 2 decorator bags, and a box to take your roses home in. Monday, June 3 from 6:30pm to 8:30pm, $25

BUSINESS WORKSHOP - HOW TO START YOURS: Are you wanting to begin your own business and not know where to start? This workshop will provide you with valuable information to aid you in beginning your own business. From a cake decorating business to the steps to owning a bakery. Come ready to take notes! Information will also be provided for you to take home, and I will be presenting information on the new Cottage Law for home-based businesses. Saturday May 18th from 9:30am-11am, $55 (Please note: date/time change)

PRICING & CONTRACTS FOR YOUR CAKE BUSINESS: Ever wonder how to price your edible piece of art? Need to know how to work with brides and others? In this workshop, you will learn consultation tips and tricks, the essential contract, and how to price your cakes in this fluctating economy! Sign up for this workshop today, as space is limited! Saturday, May 18th from Noon-1:30pm $45

CAKE BAKING 101: CAKE BAKING FROM SCRATCH 5 WEEK SERIES: UPDATED RECIPES! NEW CURRICULUM! Learn how easy it is to create moist base scratch cakes to cakes for carving and specialty cake design! We will explore recipes that incorporate a variety of techniques and incorporate amazing flavors, and work with chocolate. This is more than a cake baking class. You will also learn how to create easy fillings, icings and simple decorations to compliment any cake! Please note: this class is educational via demonstration. Students will be required to bake weekly at home, and bring in their product each week, and we will discuss the elements that each student encounters. Please register by June 20th for a start date of: July 9th through August 6th - Tuesday nights 6:30-8:30pm, $125 plus $5 cash fee for curriculum.

CAKE DESIGN - BASICS * 3 Night Course Crash Course *: Students will learn how to properly put together a cake (level, torte, fill, frost), decorate with icing using piping techniques (borders, writing, accents), and simple flowers/leaves - decor taught includes ruffles and rosettes and OMBRE designing! This is more than a Michaels Class, and you will learn the latest trends (Teens welcome with parents consent) (3) Nights = Tuesday 6/25; Wednesday 6/26; Thursday 6/27 all from 6:30pm-8:30pm. $85 plus $5 cash fee for curriculum

INTERMEDIATE CAKE DESIGN-FONDANT & TIER - 3 WEEK WORKSHOP: Students will learn how to properly apply fondant, create appliqués, embossing, draping, bows, simple flowers, ruffles, and how to properly stack a cake! Basic cake decorating knowledge required. $95 plus $30 cash materials fee (3) Tuesdays, June 4, 11, 18 from 6:30pm-8:30pm

NEW! INTERMEDIATE FONDANT WORKSHOP: Learn how to properly apply fondant with texture; to accent with applique, draping, ruffles, flowers, bows and how to create simple decorations. You will need to bring a 6"x4" fondant styrofoam cake (or real cake) and 9"x4" a thinly iced cake ready for fondant; metal spatula; roll n cut mat; rolling pin; fondant embosser/cutter; crimper tool; small round cutters; wet wipes; (2) 2lb of fondant (Satin Ice or Fondarific is preferred); and an apron. We will apply texture fondant in class, stack, and create drapes, garland, bows and flowers. Teens welcome. Saturday, June 8th from 9:30-Noon, $65

HIBISCUS GUMPASTE FLOWER WORKSHOP: Make beautiful Hibiscus, bud, leaves in this workshop! Bring JEM petal pad, rolling pin, rolling mat, gumpaste, cornstarch puff, gumpaste tools, green floral tape, 22g&26g wire, needle nose pliers, and wire cutters. No dates set. GUMPASTE WIRED ROSES WORKSHOP: Students will learn how to create gumpaste roses on wire that look life-like. You will learn to create full roses, mid size and buds along with leaves. It is helpful if students have a little fondant or gumpaste experience, however it is not necessary. This is a two part workshop, and all supplies are included. $125 supplies included (or $95 in-store, no supplies included, students to provide their own) Wednesdays, May 22nd & May 29th from 6:30-8:30pm. Please sign up by May 11th to be sure supplies arrive in time.

PRIVATE LESSONS WITH RO ZINNIGER: Are you wanting to learn a specific skill and do not have the time to take a class? Then a private lesson is perfect for you. Do you live far and want to schedule a Skype session? Options are available, and pricing depends on the type of instruction you require. GLUTEN-FREE CAKE BAKING WORKSHOP - Learn how to bake a delcious chocolate cake that is gluten-free AND tasty! You will also learn a frosting and filling perfect for your gluten-free cake in this demonstrational workshop. You will enjoy a piece of cake and go home with recipes! Sign up by August 6th. Tuesday, August 13th from 6:30-8:30pm, $45

CUPCAKE DECORATING - SUMMER THEMED: Want to learn a simple way to decorate your cupcakes to have that "creative" cupcake war show look? Learn to work with fondant to create lovely looking cupcakes perfect for any occasion! All supplies and tools to use are included, along with 6 cupcakes and box to take them home in. All you need to bring are notetaking materials (pen & paper), an apron, and yourself! Saturday June 15 from 9:30 to Noon $65 - all supplies are included to use along with the 6 cupcakes and icing/fondant - sign up by June 8th.

Summer Flower Fondant/Gumpaste Topper Workshop: Students will learn how to create simple flowers using fondant and gumpaste that are perfect to top a cake, cupcake or any dessert! Bring the following supplies: fondant (colored green, yellow, pink, red, and white), gumpaste, gumpaste tools: ball tool, veining tool, shell tool, metal spatula, small rolling pin, small rolling mat or board, cornstarch, small box to carry home your creations in! Cutters to use in class will be supplied. Thursday, June 6th from 6:30-8:30pm, $25

TOPSY TURVY (CROOKED) CAKE WORKSHOP: Students will be hands on to create a topsy turvy cake! Learn how to create a topsy turvy cake easily with a variety of techniques! This is a 2 part workshop. A supply list will be provided at the first class, and some supplies will be provided. Prerequisite: You must have basics and fondant experience/classes. GOURMET CUPCAKE BAKING/DECORATING COURSE: Students will learn base gourmet cupcake recipes, fillings and frostings to create super delicious gourmet cupcakes! Students will learn to work with recipes that incorporate chocolate, beer, and some unusual ingredients! Students will also learn how to simply decorate to compliment a theme! You do not want to miss this class! $125 plus a $10 curriculum materials fee. (3) Wed. June 5th - June 19th, from 6:30-8:30pm.

FONDANT BOWS WORKSHOP: Guest instructor, Jen Rehberg of Oh For Cakes Sake, will show you how easy it to create beautiful bows (different styles) for your cakes, cupcakes and desserts! All you need to bring is: small amount of fondant and gumpaste; rolling mat; small rolling pin; pizza wheel; metal angled spatula; scissors; wipes; gumpaste tool set; ruler; and a box to carry your bows home in. $45 plus supplies above. Register by June 1st. Thursday, June 13th from 6pm to 8:30pm.

GANACHE WORKSHOP - HANDS ON: Guest instructor, Jen Rehberg will show you how easy it is to work with ganache to create super crisp straight edges on your cake with a super smooth finish perfect for a fondant finish! This European/Australian foolproof beginner method is perfect for those that want that perfect straight smooth cake with no bulges and allows for a thin coat of fondant! The techniques that you learn also work with buttercream! This is a two part workshop, where the first class is demonstration and the second class is hands on. Please bring note taking materials to the first class, along with a $15 cash materials fee. Register by June 1st please. Mondays June 17th & June 24th from 6:30-8pm. Only $75 plus supplies!

ANIMAL TOPPERS MODELING WORKSHOP: Guest Instructor, Jen Rehberg, will teach you how easy it is to create these super cute animals by modeling - which are perfect for cupcakes or a baby shower cake or birthday cake! You will go home with your own edible little zoo! Sign up by June 15 for this great modeling workshop! All you need to bring is fondant, gumpaste, gumpaste tool kit, paint brush, bottle of water, black edible marker, toothpicks, rolling mat, rolling pin, metal spatula, wipes, box to take your zoo animals home in. Saturday, June 29th from 9:30am-11:30am, $55 plus supplies for this awesome modeling workshop

ALLIGATOR TEXTURE PURSE WORKSHOP: Guest Instructor, Jen Rehberg, will teach how to carve, create alligator texture, create all the purse elements and guide you through the process of putting the cake together. This is a two-part workshop, and you will need to bring to the first class: gumpaste, gumpaste tool kit, rolling mat, small rolling pin, angled metal spatula or pizza wheel; paint brush; lemon extract; luster dust = any color; 18g cloth covered wire; exacto knife with a cutting board; wipes; and a box to store your pieces in. Jen will give you a supply list for the second class. You must register by July 6th in order to get the mold. $225 plus a $30 cash fee plus supplies. Saturdays July 27th and August 3rd from 9:30-1:30pm.

Professional Cake Decorating Course: This course is perfect for the bakery owner, cake decorator home-based business, graduated pastry chefs, and enthusiast. Students must have working knowledge of basic buttercream piping and fondant. Students will create a wedding cake and 6-tier special occasion cake based on the latest cake decorating trends. Royal icing piping, fondant accenting, gumpaste wired and non-wired flowers, and sugar/isomalt flowers/pieces will be included in the curriculum.
